Grey Matter Distillery is Jacksonville’s first craft distillery! Locally and family owned, we were founded in 2014 with a simple goal: to make great spirits right here in Jacksonville.

In 2021, Grey Matter found its home, and a little bit of its heart, in Mayport. That’s when we opened our doors to the public and introduced the cocktail lounge. Since then, it’s grown into so much more, with handcrafted cocktails, themed events, and immersive transformations throughout the year.

And when we say ours, we mean it. We built this place ourselves, literally. Owner Paul Grey built the bar by hand, while our founders, staff, and friends helped build the rest. No design firm or big construction team. Just a small group of people creating a place we hoped our community would love as much as we do.

Today, we distill and bottle Carve Craft Vodka, Live Oak Whiskey, Mayport Moonshine, and Ribault Rum right here at Grey Matter. From the spirits to the cocktails, so much of what you experience here is created in-house by our small team.

And depending on when you visit, our cozy little distillery might look completely different. Throughout the year, Grey Matter transforms into immersive pop-ups with new décor, cocktails, and events. You might even wonder if you walked into the right building.

After all these years, we’re incredibly grateful to everyone who continues to walk through our doors. Every visit, bottle, cocktail, event, and person who tells a friend about us helps keep this little local distillery going.
